Heritage & Journey

Our Story: Keeping the Irish Hearth Burning

From a love of Irish food to a food truck, a comeback, and now our very first café.

Every business has a story, and ours began long before The Irish Van ever hit the road.

Between 2000 and 2005, I fell in love with Ireland and its food. From a proper Irish breakfast with sausages, rashers, black and white pudding, to the simple comfort of a good sausage roll, these were the foods that stayed with me long after leaving Ireland.

There was something special about the food, the people and the traditions. It wasn't fancy or complicated. It was good, honest food that brought people together.

And those memories never really left me.

Where It All Began — 2018

In 2018, Will decided to turn that love of Irish food into something more.

He came up with the idea of starting what we believe was Australia's first dedicated Irish food van, bringing those familiar favourites to people who missed them just as much as we did.

And just like that, The Irish Van was born.

What started as an idea became a family business built around good food, Irish traditions and the enjoyment of sharing something familiar with others.

2020 — An Unexpected Goodbye

Then came 2020.

Like so many other businesses, we faced challenges that nobody could have predicted. Between COVID-19 and several other circumstances, we made the difficult decision to part ways with our beloved food truck.

It wasn't an easy decision, but sometimes life takes you in a different direction.

Although the truck was gone, The Irish Van wasn't completely forgotten.

Will kept our Facebook page running, occasionally posting the idea of making a comeback, just to see whether anyone still remembered us.

And as it turned out, people certainly did.

Looking Forward

March 2026: The Comeback

Fast forward to March 2026.

We decided to ask the question once again.
Would anyone like to see The Irish Van return? The response was unbelievable.

The messages, encouragement and enthusiasm from the community genuinely surprised us. After all those years, people still remembered The Irish Van and wanted us back.

So we thought, why not?

But this time, we decided to approach things a little differently.
Rather than immediately returning to the food truck, we set out to find a supplier who could provide the genuine Irish products we knew and loved. We wanted proper Irish sausages, rashers, black and white pudding and all those familiar products that can sometimes be difficult to find in Australia.

And that's when we met The Irish Butcher.

What began as a simple search for a supplier soon turned into something much bigger.
We formed a business partnership with The Irish Butcher, giving The Irish Van the opportunity to supply authentic Irish products throughout Queensland and other Australian states.
Suddenly, our little idea of making a comeback had grown into a whole new business opportunity.

Back on the Road, but in a Different Way
The Irish Van was back on the road, only this time we weren't just cooking food — we were delivering the products people had been missing.
From the Gold Coast to regional Queensland and beyond, we began travelling to communities, attending Irish events and delivering orders directly to customers.
We expanded our range to include traditional Irish meats, pantry essentials, drinks and other much-loved favourites.
Along the way, we met wonderful people, reconnected with old customers and welcomed plenty of new ones.
Our customers became a big part of the journey, and their continued support helped us realise that The Irish Van could become much more than we had originally imagined.

The Next Chapter

October 2026: The Cooking Begins Again

And now, fast forward to October 2026. The Irish Van is preparing to open its very first café on the Gold Coast. After six years away from the food truck that started it all, we're finally getting back to something we have missed — cooking. The breakfast rolls, chicken fillet rolls, spice bags, curry chips and other favourites that people enjoyed from our original food truck are making their return. Only this time, we're putting down roots. Our new café will bring together freshly cooked food, authentic products from The Irish Butcher, Irish groceries and a place where people can sit down, enjoy a meal and have a bit of craic. It's an exciting new chapter for us, and one we never imagined when we asked that simple question back in March.

And the Story Continues...

Looking back, it's been quite a journey. From falling in love with Irish food between 2000 and 2005, to launching our food truck in 2018, saying goodbye in 2020, and finding our way back in 2026. There have been challenges, changes of direction and plenty of lessons along the way. But one thing has remained the same — our love of good Irish food and the community that surrounds it. We're incredibly grateful to everyone who has supported us, whether you visited our original food truck, responded to our comeback post, placed an order, met us on the road or simply shared a few encouraging words. You've all played a part in bringing The Irish Van back. The food truck may be gone, but the heart behind it never left. And now, with our first café about to open, the cooking is finally beginning again. Thank you for being part of our journey.
